Today, I’ve got a great surprise for y’all. Bet you love Mexican, right? You must have had tacos, burritos, and whatnots but do you know that there’s one dish that can take your taste buds on a roller coaster ride? Yes, I’m talking about the quintessential Mexican recipe – Chicken Gumbo, with a fancy name like that, it’s just gotta be good.
So, let’s start making it while we prepare for a taste explosion in our mouths.
First, we need the Qdoba chicken marinade. Use this recipe to make your mouth-watering chicken for the dish!
– 1 tablespoon soy sauce
– 1 tablespoon Worcestershire sauce
– 2 cloves garlic, minced
– 1 tablespoon honey
– 1 tablespoon vegetable oil
– ⅓ cup white vinegar
Mix all these together and reserve half of the marinade. Rub the remaining on the chicken and leave it to marinate for 30 minutes.
That’s done, let’s move to the second step – the Gumbo!
Ingredients:
– 2 tablespoons of vegetable oil
– Half of a red onion, chopped
– A green bell pepper, chopped
– A cup of okra, sliced
– A can of diced tomatoes
– 2 cups of chicken broth
– A cup of rice
– The other half of marinade we reserved
– The chicken we set aside from the marinade process
– Andouille sausage, sliced
Instructions:
1. Get a pot and heat up some vegetable oil.
2. Add the chicken and cook it until brown on both sides. Put it aside.
3. Use the same pot and add sliced sausage, let it cook for about 5 minutes.
4. Add the onion and green bell pepper, let it cook for about 2mins.
5. Add sliced okra and continue stirring for about 3 more minutes.
6. Add canned tomatoes and cook for about 5 more minutes.
7. Pour in the chicken broth, bring to boil then add the chicken you set aside.
8. Add the half cup of marinade, stir for about 2 minutes.
9. Add the rice and let it cook for about 25 to 30 minutes, till it’s fluffy and ready to serve.
Now it’s time to get plating! That’s right, the moment of truth where you get to put your masterpiece together.
Get your plates ready and ladle the gumbo straight into them. Add some rice and spread it evenly around. Top it with the chicken you made and add some sliced sausage if you still have some. Garnish with some green onion, and voila!
