Braised Beef Neck Bones

Ingredients:
- 4 lbs beef neck bones
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 cups beef broth
- 2 cups water
- 1 tablespoon vinegar
- 1 tablespoon paprika
- 1 tablespoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions:
- Preheat oven to 350°F.
- Season the beef neck bones with salt and pepper and paprika.
- In a Dutch oven, heat 2 tablespoons of oil over high heat.
- Add the beef neck bones to the pot and cook until browned on all sides.
- Remove the beef neck bones and set them aside.
- Add onions and garlic to the pot and cook until softened.
