Indian Zucchini Side Dish
Ingredients:
- 2 medium zucchinis
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 2 tablespoons oil
- Salt to taste
Instructions:
- Wash the zucchinis and cut them into small cubes.
- Heat oil in a pan and add cumin seeds and mustard seeds. Fry until they begin to sputter.
- Add the cubed zucchinis to the pan and stir well.
- Add turmeric powder, red chili powder, and salt. Mix well.
- Cook covered on low heat until the zucchinis are soft and tender, stirring occasionally. This should take approximately 8-10 minutes.
- Your Indian-style zucchini side dish is ready to serve!
Indian Style Stirfried Zucchini / Zucchini Sabji / Zucchini Curry
Ingredients:
- 2-3 zucchinis
- 1 small onion, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon ginger-garlic paste
- 2 green chilies, chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 2 tablespoons oil
- Salt to taste
Instructions:
- Wash the zucchinis and cut them into small cubes.
- Heat oil in a pan and add cumin seeds and mustard seeds. Fry until they begin to sputter.
- Add chopped onions and fry until they become translucent.
- Add ginger-garlic paste and chopped green chilies. Fry for a minute or two.
- Add turmeric powder, red chili powder, and salt. Mix well.
- Add the cubed zucchinis to the pan and mix well.
- Cover and cook on low-medium heat for 10-15 minutes until the zucchinis are soft.
- Your Indian style stirfried zucchini is ready to serve with rice, roti, or naan!
