Let’s start with this yummy recipe, Back to the Cutting Board. This dish is perfect for a cozy night in or a family dinner. Here’s what ya need:
- 1/2 cup of tahini
- 1/4 cup of freshly squeezed lemon juice
- 1/4 cup of maple syrup
- 2 teaspoons of ground cumin
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon of ground cloves
- 2 cloves of garlic, minced
- 1/2 teaspoon of salt
- 1/4 teaspoon of cayenne pepper
- 1 cup of boiling water
- 4 cups of cooked quinoa
- 2 cups of roasted butternut squash, diced
- 1/2 cup of raisins
- 1/2 cup of toasted pine nuts
- 2 cups of chopped kale, tough stems removed
Now, let’s get to cooking:
- In a medium bowl, whisk together tahini, lemon juice, maple syrup, cumin, cinnamon, cloves, garlic, salt, and cayenne.
- Add boiling water gradually while whisking until smooth.
- In a large bowl, combine quinoa, butternut squash, raisins, pine nuts, and kale.
- Pour the dressing onto the salad and toss to combine.
Voila! Your Back to the Cutting Board dish is ready. Y’all can serve it warm or at room temperature. It’s perfect as a main dish or as a side dish.

- 1/4 cup of roasted red peppers, sliced
- 1/4 cup of sliced avocado
Now, let’s get to cooking:
- Toast the bread.
- Spread mayonnaise on one slice and Dijon mustard on the other.
- Place cheese on one slice and arugula, roasted red peppers, and avocado on top of the cheese.
- Place the other slice of bread on top and cut in half.
