Healthy Busy Day Soup Recipe
This soup looks so yummy and easy to make! Here’s what you’ll need:
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups vegetables of your choice, diced
- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans (15 oz), drained and rinsed
- 4 cups low-sodium vegetable broth
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked quinoa
Instructions:
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic and cook for 2 minutes until fragrant.
- Add vegetables and cook for another 5 minutes until softened.
- Add diced tomatoes, kidney beans, vegetable broth, oregano, basil, salt, and black pepper.
- Bring to a boil then reduce heat and simmer for 15 minutes.
- Stir in cooked quinoa and serve.
Busy Day Soup
This is a classic recipe that has been around for ages. It’s simple, delicious, and satisfying. Here’s what you’ll need:
Ingredients:
- 1 lb ground beef (lean)
- 1 onion, chopped
- 2 cans diced tomatoes (14.5 oz)
- 2 cans beef broth (14 oz)
- 1 can mixed vegetables, drained (15 oz)
- 1/2 cup uncooked elbow macaroni
- salt, pepper, and garlic powder to taste
Instructions:
- In a large pot, cook ground beef and onion until the beef is no longer pink.
- Drain the fat.
- Add diced tomatoes, beef broth, mixed vegetables, elbow macaroni, salt, pepper, and garlic powder.
- Bring to a boil then reduce heat and simmer for 20-30 minutes until macaroni is soft.
- Enjoy!
