Ingredients:
- 1 cup rice
- 1 cup toor dal (pigeon peas)
- 2 cups mixed vegetables (carrot, peas, beans, bell pepper)
- 2-3 green chilies, slit
- 1 large onion, thinly sliced
- 1 large tomato, finely chopped
- 1 small piece ginger, grated
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp fenugreek seeds
- 2 tbsp oil
- 1 tbsp ghee
- 1/2 tsp hing (asafoetida)
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 2 tbsp bisi bele bath masala powder
- 1 tbsp tamarind pulp
- 2 tbsp jaggery or sugar
- Salt to taste
- Water as needed
Instructions:
- Wash the rice and toor dal, then soak them for about 30 minutes. Later, pressure cook them together with 5 cups of water, turmeric powder, and a pinch of salt. Once the cooking is done, mash the dal and rice together.
- Heat oil and ghee in a large pot. Add the mustard seeds, cumin seeds, and fenugreek seeds. Once the mustard seeds crackle, add the hing, onions, green chilies, and ginger. Fry until the onions turn golden brown.
- Add the chopped tomatoes and cook until they turn mushy. Then, add the mixed vegetables and cook for a few minutes.
- Add red chili powder, bisi bele bath masala powder, salt, tamarind pulp, jaggery or sugar, and a cup of water. Give it a good stir and let it simmer for around 10 minutes.
- Add the mashed rice and dal mixture and mix thoroughly. Add water as needed to reach your desired consistency.
- Simmer the dish for around 10 minutes, stirring occasionally to avoid sticking to the bottom of the pot. Serve hot with a garnish of fresh coriander leaves.
